Elayada — literally “leaf ada” — is a steamed rice flour dumpling wrapped in a banana leaf, which lends it a subtle earthy aroma as it steams. The jaggery version is filled with a sweetened coconut-jaggery mixture, folded into the leaf, and steamed until soft.
